摘要
以忧遁草、秋葵为原料,研制复合功能饮料。通过单因素和正交试验设计优化忧遁草秋葵复合功能饮料的最佳配方为:忧遁草汁添加量40 g/L、秋葵汁添加量150 g/L、柠檬酸添加量1.0 g/L、木糖醇添加量60 g/L。饮料颜色为草绿色,具有秋葵应有的清香,与忧遁草的风味协调,酸甜适口。总酚含量(以没食子酸计)为59.44μg/m L,总黄酮(以芦丁计)含量为99.14μg/m L。
With Clinacanthus nutans,okra as raw materials,a healthy plant beverage was developed.The optimal formula of the okra plant beverage was determined through orthogonal test and sensory evaluation as follows:40 g/L Clinacanthus nutans juice,150 g/L okra juice,1.0 g/L citric acid,60 g/L xylitol.A kind of composite beverage was developed successfully with brown grass green color,sweet and sour moderate and a soft coordination aroma.The beverage quality indicators was total phenolic(with gallic acid) 59.44 μg/m L,total flavones(with rutin) 99.14 μg/m L.
