牛肝菌、羊肚菌营养功能特性及利用价值浅析 被引量:37

摘要 综述了牛肝菌、羊肚菌的营养及功能成分种类及含量,初步分析牛肝菌、羊肚菌营养功能成分特点,发现牛肝菌、羊肚菌营养及功能成分种类丰富,蛋白质及氨基酸含量高,必需氨基酸齐全,且占比高;脂肪含量低,且以不饱和脂肪酸为主;多糖和纤维素含量高;矿质元素种类及含量丰富,含有硒等多种有益元素;富含多糖、甾醇和黄酮类等功能成分,挖掘潜力大,为羊肚菌和牛肝菌保健品及产业的发展提供参考。 Review bolete and toadstool of different components of nutrition and function and content.Depend on the preliminary analysis of nutritional and functional components of bolete and toadstool,and both fungus species are abundant in the nutritional and functional components.Its contents high content of protein and amino acid,high proportion of essential amino acid,and low fat content,are high in unsaturated fatty acids and polysaccharide and cellulose content,rich in mineral elements,containing selenium and other beneficial elements;They have numerous functional ingredients,polysaccharides,such as sterols and flavonoid.Bolete and toadstool are widely used fungi having great exploitation potentiality to provide a reference for the development of health care products and industry of bolete and toadstool.
