摘要
酵素是指醋酸菌、酵母菌等多菌种复合发酵果品、蔬菜或中药而形成的包含多种生物酶、多酚类、益生菌、益生元、维生素、有机酸、矿物质等功效成分的微生态整体。文章综述了微生物酵素的保健功能、美容功能以及在农业领域的应用,提出了现存的几点问题,对今后酵素产业的发展方向进行了展望。期望能对微生物酵素的研究提供参考。
The Microbial ferment refers to a micro ecosystem produced by fermenting fruit,vegetable or traditional Chinese medicine from bacteria,yeast strains and acetic acid. It contains a variety of enzymes,polyphenols,probiotics,prebiotics,vitamins,organic acids,minerals and other functional components. This article reviews the health function,cosmetic function and application in agriculture of microbial ferment. It also dwells on its existing problems and future directions in order to provide reference for its further research.
