摘要
牛筋面以小麦粉和玉米淀粉、水等为主要材料,经过挤压成型。目前牛筋面的生产在整体规模上仍属于手工半机械式操作,工业化生产进程缓慢。介绍了牛筋面的工业化生产工艺及装备,分析了对牛筋面品质产生重要影响的原料特性及生产工艺参数并提出了牛筋面的质量指标,为实现牛筋面工业化生产奠定理论基础。
The main material is wheat flour and corn starch and water. But at present, the production of beef tendon is still manual and semi-mechanical operation on the whole scale, and the process of industrial production is slow. This paper expounds the beef tendon to the industrialized production technology and equipment, the au-thor thinks that deal with eleusine indica quality influence of material characteristics and production process pa-rameters monk good production equipment were studied deeply, in order to realize eleusine indica industrial pro-duction.
