摘要
为了进一步深入了解五指山水满茶的营养价值和保健功效,本研究对五指山水满茶及其他6种茶(普洱茶、白毛茶、白沙绿茶、西湖龙井、兰贵人和碧螺春)的提取物的抗氧化活性及其茶多酚、总黄酮含量进行了比较分析。结果表明:7种茶的75%乙醇提取液的抗氧化效果最好,且提取液的抗氧化活性与样品浓度成正比关系,整体热稳定性比较好。在7种茶中,水满茶清除ABTS自由基、超氧自由基和羟自由基的能力最强,且在测试浓度范围内清除能力均与样品浓度表现出量效关系,但水满茶清除DPPH自由基的能力最弱;还原能力是白毛茶最强,其次是白沙绿茶和水满茶。7种茶的总黄酮和茶多酚含量分别在3.06%~5.4%和14.6%~18.1%之间,其中,水满茶的茶多酚含量最低,但总黄酮含量却最高。因此,五指山水满茶具有较强的抗氧化活性,较高的总黄酮含量,具有较高的营养价值和保健功效。
For further understanding the nutritional value and health-promoting function of the Hainan Wuzhishan-Shuiman tea, this research compared the antioxidant activities, the contents of tea polyphenols and total flavonoids of Wuzhishan-Shuiman tea with six other teas. Our results showed that 75% ethanol extracts of the seven teas had the highest antioxidant activity. The antioxidant activities of the extracts were proportional to the sample concentrations for the seven kinds of teas,with generally good thermal stabilities. Wuzhishan-Shuiman tea had the best ABTS+·, superoxide and hydroxyl radicals scavenging capacity, with a dosedependent manner in the sample concentration range of the test, but had weaker DPPH· radicals scavenging capacity. Baimao tea had the highest antioxidant activity, followed by Baisha tea and Wuzhishan-Shuiman tea.The content of total flavonoids and tea polyphenols was respectively 3.06%-5.4% and 14.6%-18.1% for the seven teas, Wuzhishan-Shuiman tea was also detected to contain the lowest tea polyphenols, while have the highesttotal flavonoids. In conclusion, Wuzhishan-Shuiman tea has good antioxidant activity and high content of total flavonoids, which is worthy of further exploration and development.
