摘要
D-阿洛酮糖作为低热量高甜度的新型功能性甜味剂,不仅能改善食品的质构、风味和口感,还具有降血糖、降脂减肥、抗氧化等功效,在食品、医疗保健及其他领域具有重要的应用价值。阐述了D-阿洛酮糖的主要特性及保健功能,同时结合国内外研究和专利成果,综述了D-阿洛酮糖在食品、保健品、医疗及其他领域的应用和潜在价值。
D-psicose as one kind of new functional sweetener has the properties of low-calorie and high-sweetness, it can not only improve food texture and flavor, but also have functions of hypoglycemic effect, reducing fat and losing weight, antioxidation,so D-psicose has important application values in food, health, medical, and other fields. In this article, main characteristics and functional properties of D-psicose were discussed, as well as its application and potential values in different fields according to the global market research and reports.
