摘要
综述了麦麸膳食纤维的提取加工工艺,并对其在面制品中的应用进行了探究,同时提出了其在应用中存在的一些问题并探讨了解决方案,最后对麦麸膳食纤维未来发展前景进行了展望。
The latest extraction process of wheat bran dietary fi ber was reviewed and its application in flour products was explored. Meantime, some problems which bothered its application were raised and the relative solutions were also discussed. Finally, the further development of wheat bran dietary fi ber was prospected.
