摘要
综述近年来中国紫薯色素提取工艺及其功能活性,展望该色素的研究方向及应用前景。
Based on the literature learning method and summarization,the domestic research progresses on the extraction technology and the functional activity of purple sweet potato pigment were reviewe.The application prospect of the purple sweet potato pigment had also been presented in this paper,which provided a reference for its further research and development.
