新疆骏枣矿质元素含量与其品质相关性初探 被引量:10

摘要 探讨新疆主栽骏枣矿质元素与品质的关系,为进一步深化利用骏枣资源提供理论依据。以新疆11个主产区产出的55个骏枣样品为试验材料,测定其钾、铜、钙、锰、锌、镁、铁7种主要有益矿质元素及4种品质指标(总糖、可溶性固形物、蛋白质、膳食纤维)含量并进行分析。结果表明,11个不同产区骏枣中矿质元素含量由高到低依次为:K>Mg>Ca>Fe>Zn>Mn>Cu;膳食纤维是评价骏枣品质的重要参考指标,K、Mn、Zn、Cu为骏枣果实的特征元素;聚类分析结果反映了骏枣品质和矿质元素在不同地域间存在差异。综上所述,新疆11县市骏枣矿质元素组成各具特点,宜深化利用。 In order to understand the differences of mineral elements in Xinjiang jujube, and to provide theoretical basis for further development and utilization of resources. In the present study, 55 samples of Jun jujube produced in 11 main producing areas of Xinjiang were taken as test materials, On the basis of testing and analyzing the six main useful mineral elements of potassium, copper, calcium, manganese, zinc, magnesium and four kinds of quality indicators (total sugar, soluble solids, protein, dietary fiber) in the tested materials, The results were analyzed by variability, correlation, principal component analysis and systematic cluster analysis. The results showed that: The content of mineral elements in the jujube of 11 different producing areas showed the characteristics of K 〉 Mg 〉 Ca 〉 Fe 〉 Zn 〉 Mn 〉 Cu; Dietary fiber is an important reference index for evaluating the quality of Jun jujube, K, Mn, Zn and Cu are the characteristic elements of Jun jujube fruit; The results of cluster analysis showed that there were differences in quality and mineral elements in different regions of Jun jujube. The mineral elements of Jun jujube in 11 counties of Xinjiang have their own characteristics, so they should be further utilized.
