摘要
为探明笼养和散养两种养殖方式下仙居鸡蛋品质及主要营养成分的差异,在仙居地区选取笼养和散养两种方式的仙居鸡所产鸡蛋作为样本,分析鸡蛋的物理品质以及全蛋、蛋白、蛋黄的理化成分、维生素指标和矿物质指标。结果表明:笼养仙居鸡鸡蛋物理品质和主要营养成分均优于散养仙居鸡鸡蛋;消费者偏好的蛋黄颜色、蛋黄重、蛋黄比率指标,散养仙居鸡鸡蛋更优。
In order to determine the differences of egg quality and primary nutrient components of caged and free-rang Xianju chicken, eggs from Xianju chickens raised in cage and free range in Xianju Region were detected the physical quality, physical and chemical composition, vitamin and mineral index of whole egg, egg white and yolk. The results showed that the physical quality and primary nutrient components of eggs from caged Xianju chicken were better than those of free-rang Xianju chicken; Just consider the characteristics including yolk color, yolk weight and yolk ratio favored by customers, eggs form free-range Xianju chicken were better than those of caged Xianju chicken.
