摘要
目的为了解周口市食品污染水平及变化趋势,及时发现食品安全隐患,为有关部门开展食品安全评估、制定食品安全相关标准和控制措施提供科学和技术依据。方法根据河南省食品安全风险监测方案和工作手册的要求,在周口城区以及周口市所辖的市县区的超市、食品店、农贸市场等不同地点和环节随机采集样品并进行检测。结果全年完成12类食品798份样品的监测工作,5类监测项目,2 732条监测数据,被监测样品合格率77.7%,主要超标污染物项目集中在馒头、面条和挂面中DON、油条中的铝和熟肉制品中亚硝酸盐。结论周口市化学污染物整体染污水平不高,但部分指标还存在超标严重的现象,建议政府相关部门给予重视。
Objective To understand the level and trend of food contamination in Zhoukou,find out hidden dangers of food safety in time,provide scientific and technological basis for relevant departments to carry out food safety assessment,formulate food safety standards and control measures. Methods According to the requirements of Henan province’s food safety risk monitoring plan and working manual,samples were collected and tested in different locations and sectors such as supermarkets,food stores and farmers’ markets in Zhoukou. Results In the whole year,798 samples of 12 kinds of food were monitored,5 monitoring items and 2732 monitoring data. The qualified rate of the samples was 77. 7 %. The main pollutants exceeding the standard were concentrated in the DON of the steamed bread,noodles and dried noodles,nitrite in the aluminum and cooked meat products. Conclusion The overall level of pollution of chemical pollutants in our city is not high,but there are still some indexes exceed the standard phenomenon,suggested that the relevant government departments to pay attention.
