摘要
蜂花粉在贮存过程中温度过高或者贮存时间过长会影响其物理性状和化学组成,并进一步影响其保健功效,但目前并没有一个公认的评价蜂花粉新鲜度的指标和相关方法。通过建立4℃、室温、35℃和50℃贮存条件下的茶蜂花粉新鲜度模型,对茶蜂花粉的色度变化进行研究,结果表明,茶蜂花粉色度中的a*和b*与贮存时间存在着良好的线性相关性,并且不同温度处理出现了不同的分离趋势,因此有可能可以作为茶蜂花粉新鲜度的定量指标。
During the storage process, the temperature or the storage time affect the chemical composition and health efficacy of honeybee pollen. However, there is no well-known method for evaluating the freshness of honeybee pollen. In this study, the chromaticity of honeybee pollen of camellia sinensis was studied by developing freshness model at 4℃, room temperature, 35℃ and 50℃. The results showed that, there is a good linear correlation between color a*, b* and storage time, and separation tendency appeared under different temperature treatment. Therefore, chromaticity may be used as a quantitative indicator of the freshness of honeybee pollen.
