摘要 近年来,上海市菜市场基本形成全覆盖、多层级的购菜体系,同时,随着人民生活水平的提高,消费者对菜市场的服务功能需求愈高。通过对上海菜市场实地调研,从空间布局、所有制结构、生存时间、食品追溯、价格管理等方面总结上海菜市场发展特点,同时指出上海菜市场还存在等级布局不合理、流通环节多、经营粗放、模式落后等问题。在SWOT分析的基础上,从规划、功能、改造设计、文化传承、管理模式等方面提出改进的策略和建议。 In recent years,food market in Shanghai has formed a food shopping system with full coverage and multi-level status.With the growth of people's living standards,the demand for service functions of the food market is getting higher and higher.According to on-site investigation of the food market in Shanghai,the development characteristics involve spatial layout,ownership structure,survival time,food traceability,price control,etc.It is also pointed out that the food market in Shanghai still remains problems like unreasonable grade layout,too many circulation links,poor management,backward models and other issues.On the basis of SWOT analysis,we propose strategies and suggestions for improvement from the aspects of planning,functions,transformation design,cultural inheritance and management models.
