摘要
试验研究几种天然抗氧化剂在纯鸡肉粉中的抗氧化效果。结果表明:迷迭香提取物、维生素E、茶多酚对纯鸡肉粉的抗氧化效果依次递减。通过U_5*(5~3)均匀设计试验结果可知,迷迭香提取物与维生素E按2∶1复配添加,添加量0.03%,柠檬酸添加量在0.003%抗氧化效果最佳。
The antioxidant effect of several natural antioxidants in pure chicken powder was studied. The results showed that the antioxidant effect of rosemary extract,vitamin E and tea polyphenol on pure chicken powder decreased in turn. The results of U5*( 5~3) uniform design experiment showed that when rosemary extract and vitamin E were compounded as 2 ∶ 1,and the addition amount was 0. 03%,the addition amount of citric acid was 0. 003%,the antioxidant effect was the best.
