摘要
利用环糊精包合技术对羟基酪醇进行包合可以提高其稳定性和利用率.通过比较饱和水溶液法、超声法和研磨法3种环糊精包合技术方法,确定最优的包合方法,再结合正交设计优化包合工艺.羟基酪醇β-环糊精包合物最佳包合方法是饱和水溶液法,最佳工艺为:在恒温50℃条件下,羟基酪醇体积与β-环糊精的质量比为1∶6,搅拌1 h,搅拌速度为1 200 r/min.饱和水溶液法制备羟基酪醇-β-环糊精包合物,方法可行,操作简单,可有效提高羟基酪醇的稳定性.
The stability and the utilization of the hydroxyltyrosol can be improved with the inclusion technology of β-cyclodextrin.The best inclusion method of hydroxyltyrosol with β-cyclodextrin was obtained by comparing the saturated solution inclusion method,the ultrasonic inclusion method,and the grinding inclusion method. And the optimal technological factors were determined by orthogonal experiments. The results indicated that the best inclusion method was the saturated solution inclusion method,and the optimal technological factors were as follows: the ratio of the hydroxyltyrosol volume to the β-cyclodextrin quality was 1∶ 6,the temperature was 50℃,and the stirring speed and time were 1 200 r/min and 1 h,respectively. The conclusion was that the saturated solution inclusion method used for the preparation of inclusion compound of hydroxyltyrosol with β-cyclodextrin was simple,feasilble and could effectively improve the stability of hydroxyltyrosol.
