职业院校“实战厨房”实训体系的整体构建与实践 被引量:1

摘要 针对职业院校烹饪专业实训教学过程、实训教学成果不能有效衔接就业岗位这一突出问题,提出了参照餐饮厨房实际运行标准,在实训教学过程中搭建"实战厨房"实训体系。实训运行结果显示,学生通过在该环境中学习,全面提升了综合职业能力,有效提高了综合素养,缩短了与餐饮企业磨合时间。 It is a prominent problem that in the teaching process of cooking in vocational colleges,the teaching result can not effectively connect with the post. This paper puts forward to build "practical kitchen"training system in the training teaching process,referring to the practical operation system of kitchen. The results of the training show that through studying in such environment,students' comprehensive professional ability is enhanced; comprehensive accomplishment is effectively improved and the time dealing with the catering industry is shortened.
