摘要
番茄红素是生活中常见的一种色素，因其具有突出的抗氧化特性和生理功能而被广泛的用于食品加工、药品生产、化妆品生产等多种领域。本文对番茄红素的理化性质、生理功能、提取方法和分析方法作了简要的综述，并对其提出了展望。
Lycopene is a kind of common pigment. Because of its excellent Antioxidant properties and physiological function, It is widely used in food processing , drug production and cosmetic preparation and etc. In this paper, the physicochemical properties, physiological fuctions, extrtaction techniques and analylical methods of lycopene were reviewed, and its future application and development are prospected.
