摘要
为了解外源乙烯对猕猴桃货架品质的影响,以"贵长"猕猴桃为试材,研究外源乙烯对"贵长"猕猴桃货架期色泽、TSS、可滴定酸、固酸比、糖酸比、还原糖、叶绿素、抗坏血酸和SOD的影响。研究发现,外源乙烯加快贵长猕猴桃货架成熟期,其果肉色泽a*、色泽变化(E)、TSS、固酸比和还原糖含量增加,色泽b*下降,叶绿素降解;完全成熟时乙烯催熟果实的a*、TSS、固酸比和抗坏血酸含量显著高于自然成熟果实,然而乙烯催熟果实的可滴定酸、叶绿素和SOD则显著低于自然成熟果实。
In order to understand the effects of exogenous ethylene on the shelf quality of kiwifruit, the effects of exogenous ethylene on the color, edible quality, and nutrition of ‘Guichang' kiwifruit were investigated. The result showed that exogenous ethylene accelerated the increase of a*, E, TSS, solid acid ratio and reducing sugar content, the decrease of b*, and the degradation of chlorophyll of ‘Guichang' kiwifruit during shelf maturity. The a*, TSS, solid acid ratio and ascorbic acid content of ‘Guichang' kiwifruit with exogenous ethylene treated were significantly higher than that of natural fruit at fully mature. However, the titratable acid, chlorophyll and SOD of ‘Guichang' kiwifruit with exogenous ethylene treated were significantly lower than those of natural fruit at fully mature.
