复合凝聚法制备葡萄籽油微胶囊 被引量:8

Preparation of grape seed oil microcapsules by compound coagulation method

摘要 为提高葡萄籽油的耐储藏和耐加工性能,扩大其工业生产用途,研究选用阿拉伯胶与明胶作为壁材,葡萄籽油为芯材,采用复合凝聚法制备葡萄籽油微胶囊产品,并在此基础上研究葡萄籽油微胶囊的性质。实验结果表明:制备葡萄籽油微胶囊的最优工艺条件为壁材浓度1.33%、pH4、壁芯比1.69:1、壁材比1.30:1;在此模型条件下的微胶囊包埋率为86.41%。此时微胶囊产品的感官品质较好,含水量低且溶解度良好,便于产品的储存与加工。使用扫描电镜观察葡萄籽油微胶囊产品的形态结构,大部分葡萄籽油微胶囊的外形都近似球形,且颗粒表面较为光滑平整、无裂痕,致密性较好。 In order to improve grape seed oil storage and processing resistance, expand its industrial production purposes, this study selected Arabia glue and gelatin as wall material, grape seed oil as the core material, were prepared by complex coacervation microencapsulation of grape seed oil, grape seed oil on the properties of microcapsules and on this basis, the experimental results show that: the best preparation conditions of grape seed oil microcapsules: wall material concentration: 1.33%, pH: 4, core wall ratio 1.69:1, wall material ratio 1.30:1. Under the condition of this model, the encapsulation rate of microcapsule is 86.41%. At the same time, the microcapsule products have good sensory quality, low water content and good solubility, which can facilitate the storage and processing of products. The morphology and structure of grape seed oil microcapsule products were observed by scanning electron microscope. Most of grape seed oil microcapsules had nearly spherical appearance, and the surface of the grape seed was smooth and smooth without cracks, and the compactness was good.
