摘要
目的了解天津市居民食品中食源性致病菌分布状况,分析食源性致病菌的污染来源。方法按照国家食源性致病菌监测方案和食品卫生微生物检测标准,对9类居民生活密切相关食品进行食源性致病菌检测。结果 2011-2014年采集8 224份样品,检出7种食源性致病菌517株,检出率6.28%,其中蜡样芽孢杆菌370株、副溶血性弧菌121株、阪崎肠杆菌12株、金黄色葡萄球菌10株、创伤弧菌2株、产毒大肠埃希氏菌(ETEC)和单核细胞增生李斯特氏菌各1株,未检出沙门氏菌、志贺氏菌。结论副溶血性弧菌和蜡样芽孢杆菌污染较严重。
Objective To survey the contamination status and distribution of food-borne pathogens in Tianjin, and discuss the cause of contamination, providing the scientific basis for risk early warning of food safety and Strengthening of supervision specifically. Methods According to the national project of food-borne diseases monitoring and standard of food hygiene microbiology detection, 9 kinds of food, which were closely related with life, were detected for food born pathogenic bacteria. Results 8 224 samples of 9 kinds of food were collected from 2011 to 2014, from which 517 strains food-born pathogenic bacteria were separated, the rate of separation was 6.28 %; among which 370 strains of Bacillus cereus, 121 strains of Vibrio parahaemolyticus, 12 strains of Enterobacter sakazakii, 10 strains of Staphylococcus aureus and 2 strains of Vibrio vulnificus, 1 strain of the Listeria monocytogenes, 1 strain of Enterotoxigenic ecoli bacteria were identified. Conclusion Food contamination by Vibrio parahaemolyticus and Bacillus cereus was severe.
