摘要
采用电解水代替SO_2以改进玉米淀粉生产工艺。以传统工艺(0.2%SO_2)作为对照,通过酸性电解水(Ac EW)与碱性电解水(Al EW)二次浸泡来提取玉米淀粉。结果表明,最佳提取工艺为Ac EW浸泡43 h后再使用Al EW浸泡5 h,此工艺下淀粉收率最高,达到(67.2±1.6)%,并与传统的湿法工艺(SO2浸泡48 h)的淀粉收率(67.4±1.0)%比较,无显著性差异(P>0.05)。
Wet-milling process was widely used to produce starch,during which sulfur dioxide( SO2) and water were used to penetrate corn kernels. However,the application of SO2 had caused increasing concerns in public due to its adverse effect on human health and the environment. Using electrolyzed water( EW) including acidic electrolyzed water( Ac EW) and alkaline electrolyzed water( Al EW) to replace SO2 in the corn wet-milling procedure was studied in this paper. the EW wet-milling procedure was determined as the combination of Ac EW steeping for43 hours and Al EW steeping for 5 hours,whose starch yields( %) was(67. 2 ± 1. 0) The further results showed that the EW wet-milling procedure did not affect the starch yields. However,the application of Al EW could bring Na+into the starch. Further research should be performed to determine the optimized process of EW wet-milling and the quality of the starch.
