复方中草药对乌蒙乌鸡生长性能、屠宰性能和肉品质的影响 被引量:23

Effects of compound Chinese herbal medicine on growth performance,slaughter performance and meat quality of Wumeng chicken

摘要 为研究复方中草药制剂对乌蒙乌鸡生长性能、屠宰性能和肉品质的影响。将120只乌蒙乌鸡随机分成4组(对照组、Ⅰ组、Ⅱ组、Ⅲ组),对照组饲喂基础日粮,Ⅰ组、Ⅱ组、Ⅲ组分别在基础日粮中添加0.05%、0.1%、0.2%的复方中草药。结果显示,Ⅰ组与对照组相比,日均增重、腿肌率、瘦肉率均显著提高(P<0.05),日均耗料量、料肉比、胸肌红度(a*值)、腿肌剪切力均显著降低(P<0.05)。Ⅱ组与对照组相比,日均增重、屠宰率、半净膛率、胸肌率、腿肌率、瘦肉率、pH均显著提高(P<0.05),日均耗料量、料肉比、胸肌与腿肌红度(a*值)、胸肌黄度(b*值)、胸肌亮度(L*值)、胸肌与腿肌滴水损失率、胸肌蒸煮损失率、胸肌与腿肌剪切力均显著降低(P<0.05)。Ⅲ组与对照组相比,日均增重、胸肌率、腿肌率、瘦肉率均显著提高(P<0.05),日均耗料量、料肉比、胸肌红度(a*值)、胸肌蒸煮损失率、腿肌剪切力均显著降低(P<0.05)。这表明日粮中添加不同剂量复方中草药能改善乌蒙乌鸡的生长性能、屠宰性能和肉品质,提高乌蒙乌鸡的食用和药用价值,最适添加剂量为0.1%。 To study the effect of compound Chinese herbal medicine on growth performance,slaughter performance and meat quality of Wumeng chicken. 120 Wumeng chicken were randomly divided into 4 groups(control group,group Ⅰ,group Ⅱ,group Ⅲ),the control basal diet,group Ⅰ,Ⅱ,Ⅲ were added 0.05%,0.1%,0.2% compound Chinese herbal medicine in the basic diet. The results showed that the average daily weight gain,leg muscle rate and lean meat rate of group Ⅰ were signifi cantly higher than those of the control group(P〈0.05),and the daily average consumption,feed to meat ratio,breast muscle redness(a* value)and leg muscle shear force were signifi cantly decreased(P〈0.05). Compared with group Ⅱand control group,average daily gain,dressing percentage,semi eviscerated percentage,breast muscle rate,leg muscle rate,lean meat rate and p H value were signifi cantly increased(P〈0.05),average daily feed consumption and feed meat ratio,breast and leg muscle redness(a* value),chest muscle yellowing(b* value),chest brightness(L* value),breast and leg muscle drip loss and cooking loss rate,breast and leg muscle shear force decreased signifi cantly(P〈0.05). Compared with the control group,the average daily weight gain,chest muscle rate,leg muscle rate and lean meat percentage of group Ⅲ were signifi cantly increased(P〈0.05),and the daily average consumption,feed to meat ratio,chest muscle redness(a*),breast muscle cooking loss rate and leg muscle shear force were signifi cantly decreased(P〈0.05). Add the growth performance,slaughter performance and meat quality of different doses of compound herbs can improve the diet in Wumeng chicken,raising Wumeng chicken edible and medicinal value,the optimum amount is 0.1%.
