基于流通温度变化的苹果品质评价模型的构建

Construction of Apple Quality Evaluation Model Based on Change of Circulation Temperature

摘要 温度是影响物流过程中水果品质变化的主要因素,探索温度与水果品质之间的关系对于流通企业物流质量的提升具有重要价值。该研究首先分析了苹果的硬度、颜色、可溶性固形物及可滴定酸等品质指标随温度的变化关系,分析发现硬度指标和颜色指标随温度变化关系的线性相关性较强,然后对硬度和颜色指标进行动力学分析,结合零级动力学方程和Arrhenius方程构建了基于温度变化的苹果品质评价模型,通过验证得知模型的相对误差率在8%~15%,准确率比较高,其中对于色泽指标中b~*的预测准确率更高。 Temperature is the major factor that influences the quality of fruits.Exploring the relationship between temperature and fruit quality is of great value to the improvement of circulation enterprises′logistics quality.This study analyzed apple′s quality indexes with the change of temperature firstly,including firmness,color,TSS and titratable acid.It was found that the firmness and color index were more linearly correlated with temperature changes and they were more suitable to evaluate the quality of apple in the circulation.Then this study analyzed these two indexes combined with dynamics,according to the zero-level kinetic equation and the Arrhenius equation,we constructed the quality tracing model.The relative error rate of the model was 8%-15% and the prediction accuracy of b^*in color index was higher.
