摘要
中国白酒是中华民族的传统发酵食品,对原料、工艺以及贮存时间等方面的要求极高,是粮食之精华,具有一定的保健作用,也是中华传统文化的重要组成部分,但这些价值和文化没有得到应有的理解,使白酒近年来在社会舆论中屡遭诟病。从中国白酒的文化与工艺、中国白酒与健康、中国白酒与时尚、中国白酒的国际化以及回归生活等五个方面探讨中国白酒的可持续发展之路。
Baijiu is the traditional fermented food of Chinese. It is distillate of foodstuff and extremely demanding for raw material, process and storage time and has certain effect on health. Also it is an important component of Chinese traditional culture. But the material and spiritual value of Baijiu should not be understood. Even Baijiu has been repeatedly criticized in the public opinion. So this paper discussed sustainable development of the Baijiu from culture and technology, Baijiu and health, Baijiu and fashion, and the internationalization of Baijiu.
