摘要
作为老八大名酒、四次蝉联国家金奖的古井贡酒,多年来一直以"色清如水晶,香醇似幽兰,入口甘美醇和,回味经久不息"享誉海内外,受到越来越多消费者的喜爱。结合自己多年的工作经验,从古井贡酒独特的地理及水土资源,桃花曲酿造工艺、以及酿酒工艺简要探讨古井贡酒感官特征形成的原因以及古井未来酒体发展的方向,供同行参考。
As the top eight famous Baijiu, Gujing Tribute won the national golden four times in a row. Gujing Tribute is known around the world many years for "Color as crystal, mellow entrance like orchids, sweet and mellow aftertaste" and widely loved by more and more consumers. Based on many years work experience the author briefly discussed the forming process of sensory characteristics of Gujing Tribute and the direction of development from the unique resources of geography and water, brewing technology of Peach blossom spring Daqu and Baijiu making technology,for reference.
