花生(油)中黄曲霉毒素的污染、控制与消除 被引量:23

Aflatoxin in Peanut(Oil): A Review on the Contamination Survey,Control and Elimination Methods

摘要 黄曲霉毒素是目前已知的毒性最强的致癌物之一,在富含油料的种子中污染较严重。从调查的原料花生和花生油中黄曲霉毒素的污染情况出发,对国内外花生及其油品中黄曲霉毒素限量和检测方法进行分析,并从花生原料的筛选与脱毒、贮藏与加工过程控制以及成品花生油黄曲霉毒素的脱除3个方面,综述了国内外近年来对花生油中黄曲霉毒素控制与消除方法,以期对国内花生油及其制品控制、消除黄曲霉毒素污染提供参考。 Aflatoxin(AFT), one of the most toxic carcinogens, is especially seen in oil rich seeds, like peanuts.This paper reviewed aflatoxin contamination of peanuts and peanut oil in domestic, and the maximum tolerated limit of home and abroad in peanut and peanut oil, the detection methods of AFT were also presented, this review mainly introduced the control and elimination methods of AFT in peanut and its oil by three aspects: peanuts screening and detoxification, AFT control during peanuts storage and oil processing, AFT removal in peanut oil. This paper provide theoretical basis for the AFT elimination on peanut oil and its products.
