陶瓷容器贮酒与酒体品质的关联性研究 被引量:15

摘要 经发酵、蒸馏而得的新酒,必须经过一段时间的贮存,以保证白酒风味品质。白酒贮存容器种类很多,有陶瓷容器、不锈钢容器及铺有陶瓷板的地下酒池,不同的贮酒容器对白酒品质影响不同。相对于不锈钢酒罐和地下池贮酒,陶瓷容器贮存的酒样中主要酯类物质变化较快,新酒气味明显减弱,硫化物等异味物质减轻,燥辣感减弱,口感变得醇和,甜度略有增强。外部环境条件选择对酒质的优劣也至关重要,露天式贮存环境下白酒酒样质量损耗大,地窖封闭式环境贮存酒样口感更稳定,酒体更加丰满。 The newly-produced liquor must be stored for a period to guarantee liquor flavor and quality. There are lots of liquor storage containers including ceramic containers, stainless steel containers and underground pool with ceramic floor. Different liquor storage containers have different influence on liquor quality. Compared with stainless steel containers and underground pool, liquor samples stored in ceramic containers had the following features: main esters changed quickly, fresh smell weakened significantly, sulfur compounds and other odors reduced, rough taste weakened and taste became soft, and the sweetness slightly enhanced. Besides, the selection of external environmental conditions were also crucial to liquor quality. Out-of-door liquor storage resulted in large liquor loss, and closed cellar storage made liquor with stable taste and fuller liquor body.
