摘要 在使用UPLC-MS/MS方法探究葡萄酒中存在的花色苷种类的过程中发现锦葵色素有两种形态的同分异构体,这两种物质的性质极为相似,无法轻易的区分,本文就区分这两种物质的方法展开了讨论与试验,最终敲定了使用UPLC-MS/MS区分这两种同分异构体的仪器条件以及试验方法。 During the exploration process of anthocyanins in grape wine by UPLC-MS/MS, 2 malvidin isomers were found. Their properties were extremely similar, so they were hard to distinguish. In this paper, we discussed the methods for distinguishing the 2 isomers. Finally, the use of UPLC-MS/MS, as well as the related instruments and technical parameters were determined.
