摘要
本文介绍了溶菌酶的结构、性质、分离纯化方法、酶活性复性与活力测定,以及在食品工业、生物工程和医学中的应用;并对利用溶菌酶时存在的问题进行了分析总结,对溶菌酶的应用前景进行了展望。
In this article,the structure,properties,purification,activity measurement and renaturation of lysozyme are summarized.The application of the enzyme in food industry,biological engineering and medicine is also introduced.The encountered problems in application of lysozyme are pointed out,and the potential for further application of lysozyme is predicted.
