绿茶粉作为抗结剂在食盐中的应用 被引量:3

摘要 未加抗结剂的食盐长时间放置很容易发生结块,新型抗结剂的研究是盐行业的一大热点和难点。绿茶粉及其提取物加入到食盐后能够降低食盐的结块程度。通过自主开发的结块测试方法测试了包括绿茶粉及其提取物在内的多种抗结剂抗结效果,并且以扫描电镜(SEM)以及能谱分析(EDS)等表征手段对比了各种抗结剂的作用形式。绿茶粉及其提取物作为食盐抗结剂具有天然、绿色健康等特点,抗结效果明显优于二氧化硅、硅酸钙等抗结剂,为解决食盐结块问题提供了新的方向。 Salt is easy to be agglomerate in a long time storage. The research of new anticaking agent is hot and difficult in salt industry. By self-developed methods of agglomerate test, including the green tea powder and its extract, a variety of anticaking effect of anticaking agent have been tested. The methods such as scanning electron microscopy(SEM) and energy dispersive spectrometer(EDS) also have been used to research and compare the mechanism of anticaking agent. As salt anticaking agent, the green tea powder and its extract have the characteristics of natural, health, etc. Its also have a better anticaking effect compared with silica, calcium silicate, ect. The research of green tea powder and its extract has provided a new direction to solve the problem of salt caking.
