云南铁核桃低温压榨及精炼工艺实践 被引量:1

The Practice of Low-temperature Squeezing and Refining Process of Juglans sigillata in Yunnan

摘要 铁核桃油具较高的营养和商业价值,然而还没有适用于其低温压榨和精炼的生产工艺。首次以云南铁核桃为试验材料,结合云南省木本油料工程研究中心建立的木本油料预处理压榨制油中试线和油脂精炼中试线进行工艺实践,并对工艺流程和重要参数进行了优化。结果表明铁核桃低温压榨工艺参数为:原料粉碎颗粒大小≤5mm,压力48 MPa,时间2 h,经二次压榨出油率高达85%。精炼工艺优化为脱酸(温度60℃,碱液质量分数10%),脱胶(温度80℃,热水量10%,食用盐量1%),脱水(温度85℃,真空度0.09 MPa)3个工序。精炼成品油经检测后相关指标达到了国家GB 22327—2008标准。 The Juglans sigillata oil had high nutritional and business value, but hadn't the low-temperature squeezing and refining process. The squeezing and refining process was practiced and optimized firstly using the pilot plant of woody oil squeezing and refining. The result showed that the squeezing process parameters were crushing particle size ≤5 mm, pressure 48 MPa, time 2 h, oil yield 85% of secondary crushing; The refining process was optimized three steps of deacidification(temperature 60 ℃, quality fraction of lye 10%), degumming(temperature 80 ℃, water 10%, salt 1%) and dehydration(temperature 85 ℃, vacuum degree 0.09 MPa). The quality of walnut oil could reach the national standard GB 22327—2008.
