冰皮月饼是近代兴起的一种新型月饼,深受大众喜爱。阐述了冰皮月饼的制作过程,并对冰皮月饼的饼皮、饼馅及工艺的加工研究进展进行综述,归纳近年冰皮月饼的加工研究进展,并对其加工发展趋势进行探讨。
Snowy moon cake is a new moon cakes developed recently and is popular. The producing process of snowy moon cake is introduced. The research progresses of processing of snowy moon cake such as snowy moon-cake's crust, stuffing and producing technology are reviewed. The recent research progress of processing of snowy moon cake is summarized, and the tendency of the development of processing of snowy moon-cake is discussed.
