鸡肉中ω-6/ω-3多不饱和脂肪酸比较分析 被引量:4

摘要 为了研究天津市不同品种鸡肉的营养特性及多不饱和脂肪酸(PUFAs)含量,试验以天津市某大型超市出售的普通肉仔鸡肉和三黄鸡肉为研究对象,对其胸肌和腿肌肉品质进行测定和分析,同时利用气相色谱法对肌肉中ω-6 PUFAs和ω-3 PUFAs含量进行了测定。结果表明:在腿肌中,普通鸡的水分含量显著低于三黄鸡(P〈0.05),三黄鸡脂肪含量显著高于普通鸡(P〈0.05),蛋白质含量二者之间差异不显著(P〉0.05);在胸肌中,三黄鸡水分含量显著高于普通鸡(P〈0.05),脂肪、蛋白质含量二者之间差异不显著(P〉0.05);不饱和脂肪酸、单不饱和脂肪酸和多不饱和脂肪酸含量三黄鸡腿肌显著高于普通鸡腿肌和胸肌(P〈0.05),ω-6/ω-3值胸肌显著低于腿肌(P〈0.05),且普通鸡低于三黄鸡,差异不显著(P〉0.05)。说明不同品种鸡胸肌、腿肌中脂肪、蛋白质及脂肪酸等营养成分均存在差异,在购买时可根据实际情况进行选择。
