云南白莺山古茶树晒青毛茶生化成分分析 被引量:5

摘要 以云南白莺山10个古茶树群落的晒青毛茶为材料,对其生化品质进行比较分析。结果表明:晒青毛茶中茶多酚、游离氨基酸、茶碱和可可碱含量差异最大,可溶性糖和咖啡碱含量差异较小。红芽口茶茶多酚和EGCG含量最高(32.70%和58.59 mg/g),可可碱和咖啡碱含量最低。勐库大叶茶儿茶素含量最高(149.85 mg/g),且非酯型儿茶素含量高于酯型儿茶素。贺庆茶中总儿茶素含量最低,且酯型儿茶素含量高于非酯型儿茶素。 In this study, the biochemical quality of the sun-dried mao cha from 10 ancient tea tree plants in Baiyingshan Mountain were compared and analyzed. The results showed that the contents of tea polyphenols, free amino acids, theophylline and theobromine were the most different among the sun-dried mao cha, and the differences of soluble sugar and caffeine content were small. The content of polyphenols and EGCG in the one from Hong Ya Kou was the highest (32.70% and 58.59 mg/g), and the content of theobromine and caffeine was the lowest. The content of tea catechins in Meng ku Big Leaf was highest (149.85 mg/g), and the content of non-ester catechins was higher than that of ester catechins. Heqing Mao Cha has the lowest content of total catechins, and the content of ester catechins is higher than that of non-ester catechins.
