摘要
目的了解温岭市食品微生物的污染状况。方法依据2014年、2015年、2016年《国家食品污染和有害因素风险监测工作手册》的要求,在流通和餐饮环节随机抽样采集样品,分别进行金黄色葡萄球菌、沙门菌、铜绿假单胞菌、单核细胞增生李斯特菌、创伤弧菌、副溶血性弧菌、霍乱弧菌7种食源性致病菌的检验。结果共采集水产品、熟肉制品、糕点、皮蛋、豆制品、饮用纯净水6类550件样品,计1 058项,检出致病菌85株,总检出率为8.03%(85/1058)。水产品中检出副溶血性弧菌68株,检出率为68.00%(68/100);水产品中创伤弧菌6株,检出率为6.00%(6/100);熟肉制品、糕点中检出金黄色葡萄球菌11株,检出率为3.67%(11/300)。结论温岭市水产品、熟肉制品中食源性致病菌污染较重,存在着发生食源性疾病的风险,建议监督管理部门加强对相关食品的管理。
Objective To understand the food contaminations by microorganism in Wenling. Methods On the basis of the National Food Contamination and Harmful Factors in the Risk Monitoring Work Manual in 2014, 2015, 2016, respectively, samples were collected randomly in circulation and catering for the detection of Staphylococcus aureus, Salmonella, Pseudomonus aeruginosa, Listeria monocytogenes, Vibrio vulnificus, Vibrio parahnemolyticus, Choleraic vibrio, the 7 food borne pathogens. Results A total of 550 samples of aquatic products, cooked meat products, cakes, preserved eggs, bean products and purified drinking water in six categories were collected. 1058 strains of food borne pathogens were detected, with the total detection rate of 8.03% ( 85/1058 ). 68 strains of Vibrio parahaemolyticus were detected in aquatic products, with the detection rate of 68.00% (68/100) ; 6 strains of Vibrio vulnificus were detected in aquatic products, with the detection rate of 6.00% (6/100) ; 11 strains of Staphylococcus aureus were detected in cooked meat products and cakes, with the detection rate of 3.67% (11/300). Conclusion The food-borne pathogenic contamination in aquatic products and cooked meat products in Wenling are severe, so there is a risk of food-borne diseases. It is recommended that the supervision department strengthen monitoring on related foods.
