2015年-2017年日照市市售海带中铝、铅、镉污染监测分析 被引量:2

Monitoring and analysis of aluminum,lead and cadmium pollutions in commercial kelp in Rizhao during 2015-2017

摘要 目的调查日照市市售海带中常见污染物铝、铅、镉的含量,为食品安全风险评价提供基础资料与科学依据,并为市售海带的监管执法提供参考。方法在市直、县区各农贸市场、超市、食堂等进行随机采样,用电感耦合等离子体质谱法(ICP-MS)分别测定市售海带中铝、铅、镉的含量,并按照湿、淡干、盐干等3种海带样品进行分类,对检测结果进行比较分析。结果 2015年-2017年日照市市售海带样品按照湿、淡干、盐干分类。3类样品中铝含量均值,湿样品为56.32 mg/kg、58.56 mg/kg和57.39 mg/kg,淡干样品为358.6 mg/kg、376.5 mg/kg和334.5 mg/kg,盐干样品为693.2 mg/kg、666.5 mg/kg和663.3 mg/kg;铅含量均值,湿样品为0.103 mg/kg、0.121 mg/kg和0.124 mg/kg,淡干样品为1.526 mg/kg、1.822 mg/kg和1.746 mg/kg,盐干样品为0.882 mg/kg、0.905 mg/kg和0.907 mg/kg;镉含量均值,湿样品为0.024 mg/kg、0.022 mg/kg和0.026 mg/kg,淡干样品为0.388 mg/kg、0.424 mg/kg和0.388 mg/kg,盐干样品为0.215 mg/kg、0.197 mg/kg和0.185 mg/kg。结论海带中铝、铅、镉的污染普遍存在,而在湿、淡干与盐干海带中铝、铅、镉的含量差别较大,依据GB 2762—2012对藻类及其制品的铅限量要求,淡干样品与盐干样品均存在超过国家标准的现象,但对市售海带的科学监管仍缺少合适的依据。 Objective To investigate the contents of common pollutants such as aluminum, lead and cadmium in kelp sold in Rizhao, so as to provide basic data and scientific basis for food safety risk assessment, and reference for the supervision and enforcement of commercially available kelp. Methods By random sampling in farmer markets, supermarkets, canteens from counties and districts, the content of aluminum, lead and cadmium in commercial kelp were detected and analyzed with inductively coupled plasma mass spectrometer(ICP-MS). The samples were classified according to wet, lightly salted dried and salted dried, and the test results were compared and analyzed. Results The mean content of aluminum in the three kinds of samples in wet samples was 56.32 mg/kg, 58.56 mg/kg and 57.39 mg/kg, while that in lightly salted dried samples was 358.6 mg/kg, 376.5 mg,/kg and 334.5 mg/kg, and that in salted dried samples was 693.2 mg/kg, 666.5 mg,/kg and 663.3 mg,/kg. The mean content of lead was 0. 103 mg./kg, 0. 121 mg/kg and 0.124 mg/kg for wet samples, 1.526 mg/kg, 1.822 mg/kg and 1.746 mg/kg for lightly salted dried samples, 0.882 mg/kg, 0.905 mg/kg and 0.907 mg/kg for salted dried samples. The mean of cadmium was 0.024 mg/kg, 0.022 mg/kg and 0.026 mg/kg for wet samples, 0.388 mg./kg, 0.424 mg/kg and 0.388 mg/kg for lightly salted dried samples, O.215 mg/kg, 0.197 mg/kg and 0.185 mg/kg for salted dried samples. Conclusion The pollution of aluminum, lead and cadmium in kelp is widespread. While the contents of aluminum, lead and cadmium in kelp vary greatly in wet, lightly salted dried and salted dried kelp. According to the requirements of lead in algae and their products (GB 2762—2012), some samples of lightly salted dried kelp and salted dried kelp exceed the national standard. However, there is still no suitable basis for scientific supervision of commercial kelp.
