摘要
糯米在我国的种植和食用都拥有非常悠久的历史,糯米制品的产业也在迅速发展。介绍了常见的糯米制品及其加工现状,着重分析了糯米制品在生产和食用过程中存在的一些食用品质的问题,并且对糯米制品原料的品质评价体系的建立进行了探讨。
Sticky rice has a very long history of cultivation and consumption in China.The industry of sticky rice products is also developing rapidly.We introduced the common sticky rice products and their processing status,focusing on the food quality problem in the production and consumption,and discussed the quality evaluation system of special rice for sticky rice products.
