摘要
N-乙酰氨基葡萄糖(GlcNAc)是一种氨基葡萄糖(GlcN)衍生物,属于功能性氨糖类化合物,广泛应用于食品、医药及化妆品领域,市场前景非常广阔。传统的GlcNAc生产方法主要采用甲壳素水解法,该方法在原料供应、环境保护及产品安全方面存在许多潜在问题,构建高效生产GlcNAc的基因工程菌可以解决这些问题。该文着重综述了生产GlcNAc基因工程菌的构建及发酵方面的研究进展,并对GlcNAc的应用进展进行了介绍,并对如何利用工程菌提升GlcNAc产量进行了展望。
N-acetyleneglucosamine(GlcNAc) is a kind of glucosamine(GlcN) derivatives, belonging to the functional glucosamine compounds. GlcNAc is widely applied in the field of food, medicine and cosmetics, and the market prospects are very broad. The traditional production method of GlcNAc mainly adopted the chitin hydrolysis method. There were many potential problems in raw materials supply, environmental protection and product safety. The construction of genetically engineered bacteria with high production of GlcNAc can avoid these problems. In this review, the progress of construction and fermentation of genetically engineered bacteria for GlcNAc production was reviewed. The application progress of GlcNAc was introduced, and how to utilize engineered strain to improve GlcNAc yield was prospected.
