明胶基抗菌膜的研究进展

摘要 从食品加工废物中获得的可生物降解的聚合物是开发食品包装材料的可持续替代品,可提高资源利用率并减少处理后包装废弃物带来的环境问题。在天然高分子材料中,由于蛋白质的丰富营养和较低的成本从而具有较高的可用性。特别是不同来源(猪,牛和鱼)的明胶,可用于开发研究活性包装材料。明胶不仅可以用于药物,而且可以用于食品包装。将天然抗菌剂添加到成膜制剂中可延长食品保质期,延缓食品变质。本文主要介绍了近期有关于明胶基活性抗菌薄膜的研究和发展。 Renewable and biodegradable polymers and natural additives obtained from food processing wastes are con- sidered sustainable alternatives to develop food packaging materials, enhancing resource efficiency and reducing envi- ronmental problems associated with packaging waste after disposal. Among biopolymers, proteins show great potential due to their abundance and availability at low cost. In particular, gelatin from diverse sources ( porcine, bovine and fish) can be successfully employed to develop active packaging. The use of gelatins as carriers of bioactive compounds can be considered not only for pharmaceutical applications but also for food packaging. The incorporation of natural an- timicrobials into film forming formulations can extend food shelf-life. In this context, the aim of this work is to review recent studies related to the development of active antimicrobial films based on gelatin.
