Gelatin obtained from pig skins constitutes about 50% of world' s production and is mainly composed of col- lagen extracted from skin by acid bath and thermal treatment. The gelatin is used to make various products, especially hard gelatin capsules (HGC). The issue of different solubility of gelatin hard capsules in water has been the subject of research and discussion. The main reason for low dissolution rate of gelatin is the tendency to form cross-links in the denatured collagen chains under specific conditions of stabilizing the gel network and preventing dissolution. As it is extracted from animal tissues, gelatin may contain molecules other than collagen ( sugars, lipids and other proteins) which may react with collagen chains to form covalent bonds. The structure and composition of this biopolymer have not yet been determined. Indeed, there are many differences from an article to another. Consequently, the reason for the dissolution of HGC is not yet clear.
