胶原降解产物在乳制品中的应用和研究进展

摘要 随着科技的进步,天然功能性营养物的功效已经得到认识和证明,并被应用于乳制品中。添加型功能性乳制品主要包括维生素/矿物质乳制品、膳食纤维乳制品、天然植物型乳制品、添加蛋白质和氨基酸类乳制品。胶原降解产物作为功能性营养成分的一种,由于其不仅能改善乳制品的外观和口味,还能改善乳制品的保健功能,可以被添加到乳制品中。针对近几年的发展情况,本文论述了胶原降解产物的特性和功能并重点介绍了胶原降解产物在乳制品的应用及展望。 With the advancement of science and technology, the effectiveness of natural functional nutrients has been recognized and proven, and they are applied to dairy products. Additive functional dairy products mainly include vita- mins/mineral dairy products, dietary fiber dairy products, natural plant dairy products, added protein and amino acid dairy products, as a functional nutrient composition, Collagen degradation products can not only improve the appearance and taste of dairy products, but also improve the health care function of dairy product. Besides, they can be added to the dairy products. In view of the development of recent years, this paper discusses the properties and functions of collagen degradation products and focuses on the application and prospect of them.
