活性炭对墨鱼皮明胶脱色工艺的研究

摘要 明胶是天然的生物高分子,除了其物理化学性质外,色素及透明度也是衡量其质量优劣的重要指标之一。为了提高墨鱼皮明胶的应用价值,本文研究了活性炭对墨鱼皮明胶的脱色工艺,以脱色率为考察指标,通过单因素试验和曲面优化设计,考察了活性炭用量、温度、时间对墨鱼皮明胶的脱色率的影响,从而确定最佳工艺条件:活性炭添加量5%、温度65℃、时间44min,在此条件下的水解产物脱色效果好,基本达到了脱色的目的,提高了墨鱼皮明胶的品质。 Gelatin is a natural biopolymer. In addition to its physical and chemical properties, pigmentation and trans- parency are also important indicators for measuring its quality. In order to improve the application value of cuttlefish skin gelatin, the paper studied the decolorization process of cuttlefish skin gelatin by activated carbon. It was observed that the amount of activated carbon, temperature, and time affected decolorization rate through the single factor test and surface optimization design. The effect of decolorization rate to determine the optimum process conditions : the amount of activated carbon is 5% , the temperature is 65~ C. , and the time is 44 minutes. Under this condition, the purpose of decolorization is basically achieved, and the quality of the cuttlefish skin gelatin is improved.
