摘要
文章对来自国内7省份的163份油脂样品,包括猪油、禽油、豆油和鱼油进行了品质评估,并对不同样品之间的能值差异进行了分析。结果表明,不同来源的同种油脂的品质和能值差异较大。个别油脂样品中游离脂肪酸、水分、杂质和不皂化物的含量比较高,从而导致油脂的能值偏低,影响油脂的品质。
In this paper, the quality of 163 samples of fat and oil from seven provinces, including lard, poultry oil, soybean oil and fish oil were evaluated, and the energy difference between different samples were analyzed. The results showed that the fats and oils from different sources had bigger difference of quality and energy. Some samples had high levels of free fatty acid, moisture, impurities and unsaponifiable material, resulted in the energy on the low side, and affected the quality.
