不同田间成熟度对永州烟叶特色的影响 被引量:2

摘要 为充分显露和发挥永州烟叶焦甜醇甜香味风格特征,探索烟叶适宜的田间成熟度,开展试验研究。结果表明:在田间烟叶表现成熟的基础上推迟7 d采收,有利于降低烘烤能耗并节约烘烤成本;烤后烟叶的橘黄烟叶比例、上等烟比例和均价均有提高,烟叶更趋疏松,烟叶外观质量得以改善,化学成分更趋协调;其感官品质较好,焦甜醇甜香味风格特征较为突出,香气量较足,余味较舒适,评吸总分较高。 In order to fully reveal and exert the characteristics of the sweet and mellow flavor of Yongzhou tobacco leaves, the experiment was conducted to explore the suitable field maturity of tobacco leaves. The results showed that compared with the common harvesting time of tobacco leaves, delaying the harvested time for 7 days on the basis of the maturity period in the field was beneficial to reduce the energy consumption during baking and save the cost of baking; the proportion of orange tobacco leaves, the proportion of the superior baked tobacco leaves and the average price of the tobacco leaves after roasting were improved, the tobacco leaves tended to be more loose, the appearance quality was improved, and the chemical composition was more coordinated; the sensory quality was better, the sweet and mellow flavor were more prominent, the aroma was more sufficient, the aftertaste was more comfortable, and the total score was higher.
