摘要 我国是一个农业大国,但我国很多农产品无法完全达到自给自足,一定程度上依赖于进口。真菌毒素是真菌生长过程中产生的代谢物,会污染食品与农作物,给人的身体健康带来一定的危害,对农业生产具有巨大的危害性。本文主要介绍黄曲霉毒素、赭曲霉毒素、单端孢酶烯族毒素、玉米赤霉烯酮、伏马菌素等等常见的真菌毒素的危害及其检测方法,为进一步控制真菌毒素污染提供参考价值。 Although China is a big agricultural country, it still cannot fully achieve self-sufficiency in the development of agricultural production and it probably depends on imports. Mycotoxin contamination has great harm to agricultural production. It is a metabolite produced during the growth of fungi, which can contaminate food and crops and bring certain harm to human health. This article mainly introduces some common mycotoxins, such as aflatoxin, ochratoxin, trichothecene steroid toxin, zearalenone, fumonisin, etc., to introduce their toxicity hazards, and the basic methods of detection it provides certain reference value for further control of mycotoxin contamination.
