摘要 生物活性肽(简称活性肽)啤酒是以酿造用水、麦芽、酒花等为主要原料,添加具有生物活性的大豆低聚肽等植物性活性肽,经糖化发酵酿制的一种营养保健啤酒。该产品质量分数为9%,酒体清亮透明,泡沫洁白细腻、持久挂杯,具有独特的酒花香气,口味纯正,具有营养保健功效。活性肽啤酒制作结合现代啤酒生产工艺,在麦汁煮沸后添加活性肽或在啤酒成熟后添加活性肽酿制而成。活性肽的添加对啤酒发酵有促进作用,对啤酒风味和稳定性无明显影响,具有很好的应用价值和经济价值。 Bioactive peptides(active peptides) beer is a kind of nutritious healthy beer fermented by saccharification fermentation by using brewing water, malt, hops as main raw materials with adding bioactive soybean peptides such as soybean peptides. This product concentration was 9% with clarity liquid,foam white,persistent cup,unique hops aroma pure flavor and nutrition health efficacy. It was madeby modern beer production technology and the active petide was added when the wortboiling and afear the beer riping. This method was simple and convenient. Addition of active peptides promoted beer fermentation and had no obvious influence on beer flavor and stability. This products have good application value and economic value.
