摘要
黄曲霉毒素主要由黄曲霉菌产生,是一种毒性极强的剧毒物质,属于Ⅰ类致癌物。在高粱中加入AFTB_1、AFTB_2、AFTG_1、AFTG_2,在实验室模拟汾酒大生产发酵过程,并对所得的白酒样品进行分析检测,结果显示AFTB_1、AFTB_2、AFTG_1、AFTG_2经过发酵蒸馏后,没有进入酒体中,不存在AFT食品安全风险,对白酒生产安全及食品安全标准体系的完善具有重要意义。
Aflatoxin is mainly produced by Aspergillus flavus, and it is a highly toxic substance and belongs to the class 1 carcinogen. In this study, simulate Fenjiu AFTB_1、AFTB_2、AFTG_1、AFTG_2, and the results showed that AFTB_1、AFTB_2、AFTG_1、AFTG_2 did not enter the liquor after fermentation and distillation, and there was no AFT food safety risk, which was of great significance to the safety of liquor production and the improvement of the food safety standards system.
