摘要
利用区域气候特点,在大曲的生产中,从制曲生产车间、培曲曲房的构建及工艺操作等方面,侧重于培曲前期的保温、保潮工作。在后期的排潮与曲子贮存过程中,则因气候低温干燥,利于曲子的后期管理、贮存,生产的大曲中青霉、黄曲霉等杂菌少,长期跟踪1~4年的大曲各项理化指标变化非常小,贮存过程中损耗小,原酒的出酒率正常。
Using regional climate characteristics, from the production workshop of the production of Daqu, the construction of cultivating of Daqu, process operation and other aspects in the production of Daqu. It focused on the heat preservation in the early stage. In the later stage of moisture removal and in the storage process of Daqu, due to low temperature drying, that was conducive to the final-period management and storage of Daqu. There was a small amount of penicillium、aspergillus and so on in the production of Daqu. The changes of physical and chemical indexes of the Daqu with long-term follow-up of 1-4 years were very small. Small lost in storage and the originals had a normal rate of yield liquor.
