摘要
用火焰原子光谱法测定怀庆府（焦作、沁阳、温县、孟县等一带）铁棍山药中铁、锌、铜、铅和镉五种金属元素的含量。结果表明，铁棍山药中含有较高的矿物质，有很高的营养价值，有害金属含量远远低于国家食品允许标准。
The contents of iron, zinc, copper, lead and cadmium in the yam yam of huyqing mansion （Jiaozuo, Qin- yang, Wenxian County and Meng county） were determined by flame atomic spectrometry/. The results showed that iron bar yam had high mineral content and high nutritional value, and the content of harmful metal was far lower than the national food allowable standard.
