The author discusses the factors that affect the quality- of eggshell from the color, texture, shape and cleanliness. Discussed the factors that affect the quality of albumen from the stickiness, color and meat spot. Discussed the factors that af- fect the quality of yolk from color, stickiness, blood cake, dead embryo and Sticky shell. Discussed factors that affect the quality- of egg transport and storage from air chamber size and position. The author proposed a method to evaluate the quality- of eggs according to the four aspects of appearance which in order to provide the basis for consmners to buy eggs.
