摘要 从蛋壳颜色、质地、形状和洁净度探讨了影响蛋壳质量的因素,从蛋白黏稠度、颜色和肉斑形成等方面探讨了影响蛋白质量的因素,从蛋黄颜色、黏稠度、血斑与死亡胚胎和粘壳情况探讨了影响蛋黄质量的因素,从气室大小和位置探讨了鸡蛋运输与存放对其质量的影响。综合四个方面的外观性状影响因素提出了评价鸡蛋质量的方法,为消费者选购鸡蛋提供参考依据。 The author discusses the factors that affect the quality- of eggshell from the color, texture, shape and cleanliness. Discussed the factors that affect the quality of albumen from the stickiness, color and meat spot. Discussed the factors that af- fect the quality of yolk from color, stickiness, blood cake, dead embryo and Sticky shell. Discussed factors that affect the quality- of egg transport and storage from air chamber size and position. The author proposed a method to evaluate the quality- of eggs according to the four aspects of appearance which in order to provide the basis for consmners to buy eggs.
